It's Never Too Late for Cupcakes.

Well, okay, maybe deciding that you're going to bake cupcakes at 10 o'clock at night is a little ridiculous - but what's a girl to do?

Chocolate-and-Raspberry-jam



The recipe for these is a bit complicated so if you want to write it down you'd better get a pen. Are you ready?

Take one packet of Asda (Walmart) chocolate cake mix.

Mix according to the instructions.

Add 1/2 cup of seedless Raspberry jam and beat until combined.

Bake as per the instructions.

Well.... maybe it's not THAT complicated! LOL :)

They actually came out pretty yummy. You can't really taste the raspberry but it give them more of a brownie kind of texture which is nice for a change.

I iced them with this One Minute Frosting and like everyone else I wish I'd read the reviews before I started. They are right, it does indeed look like Willy Wonkas' chocolate river. I just dumped in a couple of cups of icing sugar (confectioner's sugar for you US peeps), stuck it in the fridge for 15 minutes and then beat it to within an inch of it's life with the electric whisk, and voila - spready chocolatey goodness :)

I need a little practice with the icing with a palette knife business (damn, that means I have to bake more cupcakes!) and my top tip - make sure you add your chocolate sprinkles BEFORE your icing sets completely, if you won't want to be sweeping them off the kitchen counter for hours *SIGH*
