Last night Kendo decided he must have chocolate cake.
I wasn't really in the mood for an all out baking session. I was even less in the mood for having to drive to the shop to buy baking supplies. So, time for a bit of ingenious throwing together of ingredients to make yummy chocolate sponge pudding..... in the microwave!
Here's my "bung it together from what you've got" recipe:
Marie's Easy Peasy Microwave Chocolate Sponge Pudding.
4oz caster sugar
4oz unsalted butter
4oz plain flour
1tsb baking powder (or you could use 4oz self-raising flour and skip the baking powder, I only had plain in though)
2 tsp milk
1 tsp vanilla extract
1.5 oz cocoa powder
Cream the butter and sugar in a bowl, add the eggs one at a time and mix well, add the vanilla extract. Mix in the flour, baking powder and cocoa. Add the milk if the mixture is very thick.
Put some chocolate in a microwaveable bowl (I used a packet of milk chocolate chips I found lurking in the cupboard but any chocolate will do), add the pudding mixture on top. Cover with cling film (DON'T VENT!). Put the bowl in the microwave on full power for about 5 and a half minutes (my microwave is 700 watt - adjust the time accordingly). Leave to stand for 5 minutes.
I served mine with minty green custard (a la school dinner puddings) and it's delish. To make the custard....well....open a tin or packet of custard, stick it in a bowl or jub, heat it in the microwave as per the instructions. Add 1-2 tsp of peppermint essence and a splash of green food colouring (this is completely optional, but somehow it always tastes mintier to me if its green!).
It was a bloomin' gorgeous pudding (if I do say so myself) and for a cold winters night the fact that it took about 15 minutes start to finish was a total bonus (not long stood in the cold kitchen!).
Sorry there's no photos.... it got snaffled up by the hungry hoards (including me!) before I even had a chance to think about taking a snapshot. Maybe next time.
